Summer Love

Eating is such a treat during these summer months. I do love the large variety of fruit available - it makes it easy to eat healthy! I came across some honey flavoured Greek yogurt today to go along with the three berry compote I made and the roasted apricots.

Three Berry Compote

1 1/2 C blueberries
1 C raspberries
1 C strawberries
1/2 C sugar

Combine all ingredients in a pot - bring to a brisk simmer on medium heat and turn down to medium low heat for about 20 minutes. Cool and serve.

Roasted Apricots

10 apricots halved and pitted
2 Tbsp butter
2 Tbsp brown sugar

Place apricots in baking pan close together cut side up. Put a little dab of butter in each apricot halve and sprinkle with brown sugar. Bake at 375 for about 45 minutes.

Enjoy over yogurt or ice cream.

  2. Delicious! You are very lucky though, although fresh fruit is readily available and priced well, by the time it gets here it seems like most of it is already rotten. I went to buy fresh fruit for a dessert I was making and all the berries were bad.
